Una receta fácil para dos. En mi caso con un relleno sencillo que podéis cambiar y variar por lo que más os apetezca. Con estas cantidades me salieron 4 crepes, en una sartén mediana.

- 130 ml leche
- 1 cucharada aceite de oliva
- 1 pizca sal
- 1 pizca pimienta negra
- Orégano, tomillo..
- Taquitos jamón
- Lonchas queso tierno
- Queso en polvo grana padano

- Batir bien el huevo con la harina, sal, pimienta negra, la cucharada de aceite de oliva y la leche. Intentar que no quede ningún grumo. Una vez tengamos la mezcla, la dejamos reposar en la nevera 30 minutos aproximadamente. 
- Cuando la masa haya reposado, ponemos al fuego una sartén antiadherente. Para asegurarme, la he engrasado con un poco de mantequilla. Cogemos un poco de masa con un cucharón y la vertemos sobre la sartén caliente, moviéndola rápido para que la masa cubra toda la superficie de la sartén. 
- Dejamos que se haga esa cara de la crepe hasta que notemos que ya se va soltando. Damos la vuelta con cuidado de no quemarnos y dejamos que se haga por el otro lado. El tiempo dependerá del grosor de la crepe y el fuego.
- Cuando ya esté lista por los dos lados, la dejamos sobre un plato para rellenarla. En mi caso he puesto unas lonchas de queso tierno, unos taquitos de jamón y un poco de tomillo (admite todo tipo de rellenos). Una vez rellenas, las envolvemos como si fueran un brazo de gitano.  
- Encendemos el grill del horno, 180 grados. Colocamos las crepes en la bandeja, las espolvoreamos con un poco de grana padano y las gratinamos unos minutos con cuidado, ya que se tuestan fácilmente. Listo!!
